In Spring and summer on the rise, I couldn’t be more excited to share some fun easy, healthy meals I make for my boys. I know that these recipes are like GOLD to me because my schedule asks for nothing less than ones like these. I use them EVERY WEEK. I thought I’d share mine in hopes that they might help your daily grind also when on-the-go with your little ones. What do kids love more that PIZZA?? Good question. Here is my recipe for my quick version:
English Muffin Pizza’s:
- Preheat oven to 400 degrees
-Grab a cookie sheet and spray down with some olive oil spray
-Cut open those english muffins and place on cookie sheet
-Pour on your favorite sauce [marinara, or alfredo, pesto]
-Pile on that cheese of your choice and any other toppings your little heart desires.
-Place cookie sheet in oven.
-Take out once your cheese is melted. [roughly 5-7 min]
Personally, I like to make this recipe the night before and cut them into half circles. I then put them in fridge for the next day. When I pack the Dare-U-Go!’s [dugs] for their lunch, or even a snack the main course is already ready for the day and ready when they are. I then add some ranch in one of the 3 compartments then pile on some cut up raw broccoli over it and add some cut up watermelon or some mixed nuts. Daxel loves pistachios! Personalizing the Dug with your kids favorites is the way they stay healthy and happy throughout the day and it becomes really fun and convenient for them too!
On Sundays, we have a flea market and we get to take they day to enjoy eachothers company as a family and find new local healthy vendors that have come up with meals and snacks filled with Omega 3’s, Organic produce, healthy versions of sweets and treats! It is fun for us to sample all of these to see which ones we want to invest in actually buying. Nothing is more disheartening when you try new options at the grocery store and realized the kids HATE it. That is why we love the Flea Market! Samples, baby!
I was talking to my friend Olivia over the weekend and she thought it’d be a great idea to have parents share their Go-To Quick recipes for their little ones in hopes that we could collectively all share them and create happy tummies full of variety! Feel free to share yours! I’m sure all of us working parents would LOVE to try new ones.
Like I mentioned before, with the sun out and summer season on the rise, there is nothing more exciting than sharing more adventurous memories with your little ones. They grow so fast! There is nothing wrong with buckling down and making premade meals and packing them on all the go to have more funds for more fun. After creating the Dug our family has saved lots of $ not having to buy un-healthy alternatives on-the-go, less dishes, less laundry, and more time to enjoy each other. The icing on the cake too is not using on-the-go packaging anymore which is 48% of our landfill!

Here is my FAVORITE dessert for my boys. They literally think they are devouring chocolate but they are actually eating avocados! Check it out:
Avocado Chocolate pudding
flesh of 2 ripe avocados (240g)
1/2 cup chocolate chips OR cocoa powder.
1/4 cup to 1/2 cup milk of choice.
1 tsp pure vanilla extract.
1/8 tsp salt.
pinch stevia OR 2-6 tbsp sweetener of choice
